Elevation Charcuterie and Artisan Meats
Chad Nelan and Alex Windes of Elevation Meats recently began making artisan charcuterie, sausage, and other cured meat products from their new location in Denver. I was thrilled to work with them on photos of their products and of their curing process.
To photograph salami curing I had to suit up so I wouldn't introduce contaminants into the carefully controlled environment of the curing enclosure. I only brought what I absolutely needed to get the photos and wiped down my gear with disinfectant before entering the controlled area. The display of hand-crafted goodness was impressive and enticing.
